Then add grated garlic, chopped green chillies and saute the ingredients for a few seconds.Then, add the potatoes, turmeric powder and salt and mix well. Keep aside to cool. If you want to reduce the cooking time, soak the potatoes in lukewarm water by pricking the peeled potatoes with a fork, this will make the potatoes soft.

Meanwhile, make the batter by combining besan, haldi, baking soda and little water (almost 1/3 cup).When the potato mixture has cooled, make equal sized 8 tikkis. You can give it a desired shape, in Maharashtra the vada is mostly prepared in a round shape.

Then take a shallow fry pan and heat oil. Once the oil is hot enough, then dip each tikki/ vada in the batter and then slowly slide it in the hot oil. Deep fry all 8 tikkis in hot oil, till golden brown. Drain on absorbent paper and keep aside. Slice each pav into half and place one vada in each of the pavs. Add some green chutney, spices and fried homemade chili to your Vada Pav to accentuate the taste.
